If you really want to level as a healing spec then it's up to you but it's going to be slow! I'd recommend a shadow build for levelling then switch to holy either at 70 or late 70's like 78 or something. It's very possibly to learn to heal on the way up as you can heal every instance as shadow up until 70 without issues really.
Healing when you're shadow spec is pretty easy, just rely on your prayer of mending, keep renew up and use greater heal and flash heal as required with prayer of healing if your whole party is getting hit. You miss out on a few nice abilities that are in the holy tree but you can learn to use those when you respec at 70/80.
For healing at 80 there are two viable trees you can spec into, discipline and holy, discipline focusses on healing one target (tank healing) and holy focusses on healing lots of targets (raid healing)
As far as which stats to prioritise, for holy spirit and spellpower will be the main ones until you don't need to worry about your mana regen (which will be when you've healed enough heroics and raids that you should know what to stack next).
I gather that for discipline it's more crit and spellpower than spirit but i don't know much about this as i've always been holy at 80.
For holy, circle of healing is the spec defining ability, which allows you to instantly heal 6 targets on a 6 second cooldown, along with prayer of mending and prayer of healing you can get a lot of effective healing out very quickly.
For discipline you have a more powerful power word shield which has no cooldown (although cant be chain cast on one target due to a debuff), and penance which is a great single target channeled heal on a 6 second (talented and glyphed) cooldown along with your renew, flash heal and greater heal you are very efficient at keeping up a tank being hit by something big!
