Jewelcrafting, inscription, and enchanting would be best for priests imo. JC gives a bonus of 39sp, enchanting gives 38sp, and inscription gives 37sp. Alchemy gives 37 more sp as well, but only when you use frost wyrm flasks.
Tailoring isn't a bad choice since lightweave is pretty pro now.

All crafting professions offer nearly exactly the same bonus. Enchanting is totally awesome (disenchanting!) and tailoring is just as good as any other prof. I wouldn't even think about switching profs for a second.

Top guilds require that you have the professions that give the most benefit for your class.
I'd argue for a priest, enchanting and JC are the best.

As was said first, Enchanting/JC/Tailoring, pick any of those three.
I've got Enchanting/Tailoring, and I must say, it works out well:
Ench:
+Lots of G made in Tips from Enchanting. (Sometimes even up to a 100g tip for a few enchanting jobs!)
+Disenchanting jobs, sometimes, as well.
+Easily enchant new gear when you get it, without having to find another Enchanter to do it for you.
+Lots of people looking for enchanters! (On my server, that is.)
-Really tough to level, costs a lot of G in buying greens. Much better to level this as you level up, from all the quest greens you get.
Tailoring:
+++
Lightweave Embroidery
= Sexy for any caster
+Make equipment for yourself (If you're doing Tailoring as you level, that is.)
+Once you get some of the Rep patterns or the rarer patterns, people will look for you for work.
-Cloth can be costly to buy, if you don't feel like farming it.
-Takes a LOT of cloth to level it up. Again, better off leveling it up as you level yourself.
