this expansion is a little different to BC. the gear reset is much shallower so you shouldn't expect to replace those items until around level 75... depending on whether you quest or run instances.
if you run a lot of instances you might find replacements in the 73+ instances. from just quests you won't find replacements until more like 77.
one thing that you will find is that almost all gear in wrath (particularly the instance drops) has a lot of stamina and intellect (and spirit) on it while the FSW set doesn't have much at all. for this reason, as soon as you find an item with as much spellpower (you should never take a step back in spellpower) it's certainly a good swap to make.

I'm in the same boat as you, and honestly it won't hurt you to keep on your set until 80 and you can gear up your end game stuff. I've just been keeping the potential upgrades in my bank for later and you should really be having much trouble killing mobs etc. for instances and such though you may want to swap out earlier, I'm more of a level to 80 then instance raid person though.
