If gold isn't an issue, you should easily be able to get the achievements for large numbers of non-combat vanity pets.
I think it's now also possible to level cooking/fishing/first aid very high. I heard they removed some of the level requirements for those. Haven't tested it for myself.
A completionist would probably do every quest in each zone for each race before moving on, giving them lots of rep with their factions main cities, as well as decent amounts of coin. Now that there are achievements for many zones, that would lead to several achievements for completing those areas.

Me, im just looking forward until I can roll a brand new character, walk up to the starter mailbox, and get myself the
Plenty of Pets
(15) achievement right off the bat. I believe Blizzard just need to release 3 more bind-to-account pets....
