I enjoyed leveling my rogue on a PvP server from level 1.
You will get ganked. You will also make narrow escapes. For me, this was the thrill. Constantly looking over your shoulder when leveling. Learning how to react quickly and plan quick escapes helps improve your battlefield awareness in organized PvP. Getting jumped by another player sends the blood and adrenaline pumping to a level that I never experienced when fighting even the toughest NPC.
It's not for everybody though but I would never go back to straight PvE.

PvP servers have a lot less impact nowadays than they did back in their times (Vanilla). No flying mounts. If you get bothered by ganks easily, don't bother with PvP servers. If you enjoy the thrill, go for it. Either way, it won't be as frequent as people are implying. LFD, BGs and flying mounts are scattering players more and more.

I am an hunter/engineer lvl 85 and there is no better thrill then when i do a HALO Gank jump. fly high on a mount above an enemy player and you drop on them and deploy your parachute, and start shooting away thei reaction as you are falling to the ground sends joys of pure excstacy through my veins...... when i get gank jumped.....sends joys of dissapointment because i should have known better. i just like having the thought and option of wagin war/skirmish in the middle of my quest... best time i ever had on wow was on ICC the steps leading to the raid there were some goddamn epic pvp battles just to get to the raid instance
