Titansteel Helm
Tempered Saronite Shoulders
Tempered Saronite Chest
Tempered Saronite Bracers
Dauntless Gloves
Tempered Saronite Belt
Daunting Legs
Titansteel Boots
Titansteel Wall Shield
You'll need 35 Saronite Bars, 12 Cobalt Bars, and a Crystalized Earth to make the Tempered Saronite stuff. You need another 26 Saronite Bars and 2 Eternal Earth for two the Daunting pieces, and 12 Saronite Bars, 10 Titansteel Bars, and 3 Frozen Orbs for the Titansteel pieces.
Rough estimate using my server's prices, that's like 290g for everything but the 10 Titansteel Bars, and another like 1000g for the titansteel.
You already have some good stuff out of HoL, so that's nice. Honestly just pick up all of the crafted items. You don't really need the bracers or the shoulders since yours are pretty much the same or slightly better. The Seal trinket goes a long way to making it easy to be uncrittable.
Basically, get a tanking piece in every slot, even if it's just a crafted piece. Once you have a tanking piece in every slot, reassess where you are and what you need to improve. If you are at 535 defense or more, and are comfortable in your abilities to play as a tank, I'd say you are ready to tackle some heroics.

Helm enchant is Argent Crusade.
Shoulder you can use Hodir or PvP. PvP is probably easier for you to get, it's just 10,000 honor sold in Stormwind.
Early on, you'll probably want to use Defense enchants on your Chest, Cloak, and Shield. As you get more and more defense from gear, you can start dropping your defense enchants (275 Health to chest, 225 armor to cloak, and 18 stamina to shield, in that order).
40 stamina to bracers.
Gloves you can do a cheapy 18 stamina leatherworking patch, or pick up the 2% threat +10 Parry Armsman enchant.
Belt socket
Epic leg enchant (or cheapy if the piece isn't worth it).
Tuskar's Vitality to boots is my preference, but you can use 22 Stamina just as well.
Just throw a weapon chain on your weapon, it's not worth blowing gold on a meh tanking enchant.
Gems: Blue socket = +30 Stamina, always. Yellow socket = +10 Defense/+15 Stamina, if the socket bonus is something you want. Red socket = +10 Expertise/+15 Stamina if you are under 22 Expertise (which is most likely for you), otherwise you can use +10 Dodge/+15 Stamina, again only if you want to pick up the socket bonus.
Honestly, for you, min-maxing really shouldn't be a concern. You can just blindly go for socket bonuses, it's not going to make or break you. So just put Straight Stamina in blue sockets, Def/Stam in yellow, and Expertise/Stam in red and be done with it. Also, I used the numbers for epic gems. If you don't want to blow on epics right now, greens or rares are fine. I wouldn't put an epic gem into a non-epic piece of gear, but epic gear deserves epic gems.
