This is quite an interesting question. I've been looking into it, but I haven't found a final answer yet. While you could argue that Death Knight spells don't benefit from any spell increasing stat (seeing as they are powered by attack power and not spell power) this would not be true for the Penetrations. While attack power and spell power have the same effect (roughly put) on different classes this is not the case with Armor and Spell Penetration as they work in completely different ways. (Ok, sorry for the recap, just trying to get it straight).
The true question remains, if DK spells benefit in any way from these stats. I'm inclined to think not, keeping the first argument in mind. However, as I haven't been proven neither right nor wrong in my (quite intensive) research, I won't conclude anything. Due to the fact that Spell Penetration is kind of unique in that the decreased spell resistance can't be gained from any other stat, I'm also inclined to think that it does have an effect. Summa summarum:

It has also been noted that Sapphiron
might
have some
innate
resistance. I've noticed this myself. While not game breaking, it was enough for me to notice the difference without exactly staring my combat log to the ground.
Go for it, I'm really eager to see what you find out.
