What percent of the game has been downloaded? You also might want to try going to the preferences section of the Launcher and un-checking the box that says "Allow Quick-play regardless of connection speed", if it's checked.

What specs are your computer?
Is this limited to just your mounts? Is it still choppy by running around on foot?
Start WoW and let the launcher download and install all of the dataz. Quick-play can give sub-optimal performance.
