Do you already have another profession? Also, try checking the drop down menu to the right of the window- sometimes it is set to 'unavailable' instead of allowing you to see everything. I went for a few levels before I figured that out.

Go into skills, then look under "Professions" and see what you have there, you can have a maximum of 3 secondary professions (first-aid, cooking, fishing) and only 2 main professions.
If you have two and wish to learn enchanting instead, then click on the profession in the skills section and click the little O with a slash through it. This will unlearn the profession opening up a slot to learn a new one.
