As for dual specs,
it's on its way
.
I think the reason it's been taking a while is they mean to allow for us to switch glyphs, talents setups and actions bars on the fly.
This probably means quite a bit of overhaul of the underlying systems of buttons and bars.

i have 3 gears for my pally, 2 i allways have on me, heal and tank gear, and dps in the bank
my main spec is tank, but i respec if needed, and i take the money from the guild bank, if the guild benefits from my respec, or from my pocket if want to go heal / dps a pug (read raid pug here) since it's my benefit only
i only invested gold in the tank gear , 24k hp / 22.5k armor / 539 def (unbuffed ofc), heal / dps gear is from quest rewards and dungeon drops, that no1 wanted, and i can say i can push 1500 sp and 2700ap in those gears
i see no reason to invest gold in healing / dps gear, just in tank gear (except enchants on epic items, those are worth it)
if i want to heal a normal dungeon and i'm prot, i just change gear and go do it, same goes with retri spec (even better there, more sp and crit), does not apply for tanking in holy spec, works a bit in retri spec (tank gear equiped ofc) if the proper talents for avoidance were taken

I'll occasionally respec - but if I do, it's my decision and I do it to help out a friend in a tough spot. But everyone in my guild knows that I'm leveling as Prot, with plans to tank at 80.
Now, if they offer to pay for my respec, I'll be glad to do it.
On the topic of respecs, I want to drop a situation here and see if people think I was out of line:
Our guild was setting up for a ZA run about 2 weeks before WotLK dropped, and just as we were getting ready to go in one of the tanks disconned; his Internet went down because a crew cut a line near his house.
After about 30 minutes of searching, with no luck, one of our guildies said that a Druid from his other guild had whispered him and asked if he could come to ZA; he was currently Balance but had a full tank set.
So we wait about 15 minutes, thinking the guy is respeccing, and finally ask the guy if he's ready for a port. He says yes, so we "stone" him. As a courtesy, we toss him some buff food and a couple of tank pots and start to head in, when I get a whisper: "Hey, are you guys gonna pay for my respec? I'll need a portal back to Darnassus once you give me the gold."
...
Now, had that been part of the discussion before we invited the guy, I don't know that I would have had a problem with it. But nothing was said
at all
about us paying to respec. He had whispered us about coming along - we didn't approach him to tank.
I wound up kicking him. To this day I still feel okay in doing so, but I've had a couple folks tell me that it was rude not to pay for his respec. Had we approached him and asked him to respec to tank, then paying for the respec wouldn't have been out of line IMO - but...

I'm slowly starting to save up some Holy gear for when they come out with dual specs. (When I say slowly, I mean I have 2 pieces)
Other than that, if they don't want a tank, then I'm not in their group.
I guess I better start looking at how to play a holy for when they do allow dual specs.

I personally have complete naxx ready sets for all 3. I haven't skimped on gems but the only set I have enchanted is my holy set(primary) for now. I will probably enchant my tanking set soon as well.
