As in, my priest is now dual spec. Which instance, heroic or not, do you think would be best to learn/get practice healing in?

All of them.
Healing is about adapting to whatever situation the game throws your way... It's about knowing what to expect and when to expect it... Start with easier stuff, preferably healing a tank you know and trust and work your way up towards harder stuff... Nexus, UK, DTK, CoS, VH are among the easier Heroics, AN and OK are easy enough too, but since we can't dispel poisons, some encounters from these places are a bit harder than they should be, if no one else is dispeling/cleansing...
Edit: The amount of healing required in any particular instance is directly affected by the tank you're healing... If he holds aggro like a pro and got mad tanking stats, you'll feel like you're the best healer in the game, or even as if your presence wasn't even needed... However, run the same stuff with a scrub tank and everyone will blame you for the wipes... One of the first lessons you need to learn, as a healer, is to make friends with the best tanks you meet... :)

I prefer trial by fire.
Battlegrounds or any place where you and your allies are often under highly probable threat of death, 10m Sarth 3d, or really any 10 man with one no more than 2 healers.
A good healer has situational awareness, rapidly processes new information and makes good decisions quickly. After that it's mostly reflexes and a compact ui.

Well the only healing I have ever done is BG/WG. The majority of my priests gear is honor/wg marks related. He does have the conquest badge helm and some other jewelry from badges.
I guess I will give it a try on a pug :P

Any pug, just make sure the tank is overgeared (e.g. uld lvl gear). You will barely have to heal anything and you can get a feel for the class.

Any pug, just make sure the tank is undergeared. You will have to heal your pants off, probably wipe, but you'll learn fast.
IOW, I sort of agree with ignayshus, but wouldn't throw you into s3d quite so fast :) You learn a helluvalot more under stress than you do any other way.

I grabbed a guildie who was considering tanking, and healed him in heroics. Teaches you both how to do your jobs well.

The first time I healed on Loken in H. HoL through the Novas, I felt like I must be doing something right, that's a good place to get some confidence. (I'm Disc, not sure if that affects the question).
