Best professions for min/maxing for ANYONE will be blacksmithing/JC.
JC offers the largest upgrade and also gives you meta flexability.
Blacksmithing is on par with enchanting, leatherworking and inscription right now but if you assume there will be epic gems released then it will surpass JC as well.

I like LW/JC LW/Tailoring combos.
JC as stated above and Tailoring because of
Swordguard Embroidery
.
LW because of leg and bracer enchants.

For reference:
Blacksmithing - 64ap upgrade (32ap * 2 gems = 64)
Leatherworking - 64ap upgrade (114ap - 50ap = 64)
Jewelcrafting - 66ap upgrade (54ap - 32ap = 22ap * 3 gems = 66)
Enchanting - 64ap upgrade (32ap * 2 rings = 64)
Keep in mind, there will be epic gems introduced to the game, probably with the next content patch.
According to Wowhead there will be a higher version of LW leg enchants which would make LW superior. 100ap/36 crit. So bringing total upgrade to 164ap and 36 crit. Who knows if this will actually be implemented. If this is the case though, it would only seem fair to implement something similar to other professions.

My rogue always has been and always will be Skin/LW.
I see that LW/JC has ben mention a few times above, I just want to ask.... WHY ? Fair enough the bonus you get are good but it also means you will either have to quest/farm like mad to get the cash to buy the mats to level them both or have an alt that has mining/skinning to gather the mats for you which also poses the problem of having to level to chars at the same time so there prof skills stay in sync with one another.
I can see that someone is gonna quote my post and have a good old complain (as usual) about the fast that i havn't mentioned that if you have JC/Mining you will have to farm anyway for the ores or if you have LW/Skin you will have to farm for leather etc etc....

That was my point in saying to get 2 crafting professions. If you want to maximize your stats then of course you will not want a gathering profession.
