Run Daily Heroics, Farm Heroics (for badges and a few drops), Run 5 man TOC (N), and when those are at most relatively painless, run 5 man TOC (H).

Farm Heroics for Emblems, while wearing faction tabards for Reputation and hope for decent drops from the last bosses (or all 3 bosses in ToC and ICC instances).
If you want full emblem gear, you'll need ~600 Emblems.
If you have gold to spare (and/or waste), you can get pretty decent stuff crafted by tailors, look for the bracers and chest, they're close to being best in their slots and all you have to find is a tailor with the patterns and "some" gold...

If you're not totally green, you can walk into normal ToC blindly and be king of it (if your tank knows his stuff, of course).
Then again, if you plan to buy PvP gear for PvP anyways, just go along with your plan. Any pieces you pick up will serve for a short amount of time until you get a proper PvP piece for that slot.

Best way to gear any 80 is take about 1k gold of the 2k gold you should have save up by the time you hit 80 and drop it on the Auction house. Go from 0 to overgeared in about 10 minutes.
AH Blues and Greens is not what anyone should consider "overgeared". If the OP was a Disc Priest, I'd have suggested the full craftable Frostsavage set, despite being intended for PvP (having Resilience), it has great stats for a fresh 80 Disc Priest, the stats aren't so great for a Holy Priest though, but some of the pieces might still be upgrades. It's easy to farm the mats for the pieces if you're a tailor or know one and it'd save you a good deal of gold, compared with buying straight from the AH.
