I was levelling balance, so there is a better gear synergy, but I think that you should be able to get good items for both roles while questing and levelling in instances without any difficulty.
Just try to find a resto druid site explaining which quests do give items that are still good at level 70 in order not to miss on them, and else take whatever you need more to level.

Why not go resto at 60 and start doing instances big time? If you've never been healer-guy better to start at 60 than 70, really. And as a healer you should have zero problems getting a group whenever the heck you want one.

Leveling as a boomkin will help you a lot when switching over to resto.
What I plan to do (level 67 feral druid at the moment) is to just pvp as feral and get the resto S1 set/non set epics.

I started out exactly as you have (and Im still in the process of gearing up some of my lesser quality items).
Whilst questing in outlands, you will find there are several quests offering you blue healing items. In this situation, always opt for the +healing item, as opposed to the DPS item that will help you in Cat form.
I had a few healing blues to start off with @ 70 in this manner.
I also had several green drops on the way up to 70 that were cloth +healing (dont be picky about whether or not its cloth or leather - if a cloth +healing upgrade drops, always take it - armor shouldnt matter so much at first).
I also had some balance gear as well that I had occumulated to fill some blank slots.
Its definately not the most efficient way to start - but I was able to heal through a couple of instances to start getting some blue healing drops on my way to 70.
