Hi there
My main is a priest (my MMORPG ideosyncracies :P) . I started out disc but found holy actually is more versatile at higher levels - the healings are much more powerful and the attacks are about the same. I didn't try the shadow route.
Being a healer means your dungeon waiting time is VERY short. I am often brought into dungeons half way because their first healer quit/dc.
alch/herb good for priest is an excellent choice. don't bother spending on first aid- as the healer, you won't be needing it.
If there's one draw back from priest is that you lack effective AoE spells, which makes farming more time consuming.
There is actually a priest wow fan site, although it's mostly for shadow priests. howtopriest.com
