I try to balance the two in my gear choices, but in general i'd go for hit rating over crit rating if I'm not close to the hit cap. I hate missing =P

Wrong, both have caps, crit cap is of course, 100%.
Also, you can crit "what you can't hit"
Even if you have 0 hit rating and 30% crit, you will still be critting 30% of the time.
Hit and crit are 2 different things, a crit is not a hit, and vice versa, they are on two seperate rolls.

If this is true, then let's assume for a second, by some act of God, you hit 100% crit. Now everytime you swing, you're gonna crit, but does that automatically mean that you could run around with a 0% hit chance, and still blow up the damage meters? Just doesn't seem possible, with hearing all the time, "you can't crit what you can't hit..."

Crit is capped at 95%.. so you would still need 5% hit to nvr miss xD

It would seem, to me, that while you have 0 hit rating, you still have a chance to hit the mob. However, at the hit cap you have a greater chance to hit, which will mean that the more hit you have, the more your crit will actually be useful. For instance, if I have a 50% crit rating but 0 hit rating i can still hit, and crit, but I will do both less than a person who has 25% crit and the capped hit rating.
If that makes any sense.
While the statement "you can't crit what you can't hit" may seem incorrect, it is in all aspects true. If you cant hit it, you cant crit it. The game just has a base hit chance, even at 0 hit rating, therefore, you can always have a chance to hit and crit... just significantly less than a capped person.
