There are ways to do it, I've seen custom druid skins. Only you would be able to see it though unless somebody else had the same modification.
BUT, it's against blizzard's TOS to modify files in that way.

Possible yes, against the TOS yes.
It can be done, I may have done it with my Druid and her shapeshift models for a year or so. Unless you go around announcing it, there's no way that Blizzard has of tracking you doing it, that I know of.
It's not terribly hard to do, I am sure if you search around you can find some artist that has setup a simple way of replacing models.
Just know that it is against TOS, and you accept any risks as a result.

Blizz just needs to add minor glyphs that make your ghoul look (and sound) like... a skeletal warrior, abomination, geist, etc.

I just wish there was a way to make your ghoul look like the original WoW model. I hate the new WotLK ghouls.

Thx, it would be alright if only i could see it, but I guess its not worth getting into truble for.
Only you will see if it you modify the models, everybody else will see the normal models, cause it's a client-side modification. That's why it can't really be tracked by blizzard.
Not that I endorse any hacks of course Blizzard, I'm a good little player. Tralalala

I may be mistaken, but as far as I know, the warden will be running checksum comparison on the game files. So use at your own risk.
BTW: If you change the ghoul model to something different this way, every other DK's ghoul will change too. So it's rather pointless anyway.
