The thought has crossed my mind as well. Leatherworking in WotLK is quite underwhelming. Dropping it would really a Hunter very little, if anything. The good gear can be bought or have a Leatherworker friend make for you, the same cannot be said of Engineering.
There are some good things you can make to sell as LW though, that aren't nearly as much of a pain to make as Engineering items. Armour kits are always popular, and don't take much to make, for example.
Still, Engineering does seem to offer a lot more to a Hunter in terms of self sufficiency. The goggles are certainly nice, but I suspect we'll have some recipes added in eventually for LW that can make some tier level quality gear.
Engineering is a pain to level, so if you choose to do it, be prepared for a lot of tedium. Mining flat out sucks, and you'll do a lot of running back and forth making a lot of junk you'll just vendor.
Personally, I'm sticking with LW simply because I'm already there and haven't the time to re-level new professions. If you've got a lot of time on your hands, try making a new character with Engineering and Mining and giving it a test run, and see if it's something you really want to continue with on your main.

Keep in mind that there are NO level 450 recipes for Leatherworking yet.
Blizzard might implement something...
The same can be said for engineering (goggle upgrades like in BC?)

I think "yet" is the key word there. I suspect we will see all sorts of high end LW patterns patched in with dungeon content just as was done in TBC.
