You can't use professions to duel other players, you can duel them by right clicking their name, and selecting the "duel" option. Also, you can simply use a /duel function in order to challenge them, which works for horde players in areas where they are not hostile.
Edit: Just for clarification, I am posting from the perspective of an alliance player.

If you can't tell, the above poster is making a crack at the OP's spelling.
Dual: Composed of two usually like or complementary parts; double
Duel: A prearranged, formal combat between two persons, usually fought to settle a point of honor.
