They are not necessary, they don't give any special benefit (pity), but it's handy to have them. As hunter, being able to fish stuff for your pet is nice. Cooking will give you buff food, saving you the waste of gold of buying it off the AH.

However fishing is indeed a good profession, no hunter ever fishes for food, talent+glyps = no food needed.

Could you explain further on the Talents+Glyphs = no food comment as I am doing both with my hunter and would like to know more on this as to not waste more time with this toon.

Fishing is absolutely necessary for any tailor. I can't count the number of bolts I've pulled from chests in floating wreckage and other floating debris!
This! As a leatherworker, there is a spot in the leveling that requires 20 bolts of silk cloth. With fishing, I managed to pull either enough bolts from chests, or get enough stuff to vendor or auction to buy all those bolts. They wound up costing me not a single copper. I've also pulled up 12 slot bags and even a couple blues that auctioned nicely.
Also, fishing is a great way to waste time while in queue for BGs. Outside of the fishing quest to achieve 225, you can level your fishing all the way up while standing at a pool near the battlemaster. You simply can't do that with any other profession.

as a lot of people have said it not necessary its recommended... after doing some math of my own!
/25= # of fish to next lvl! with about 3.5 fish per min!
you will spend 13 hrs 12 min fishing..assuming your quick never miss a fish and are quick to lure!... this equals 2775 fish for full lvl!..so best bet to all to lvl fish in the barrens and pick up

If you're a raider at least get cooking. Fishing may be mind-numbing to level, but it'll help with cooking mats greatly.
