The problem is, lots of other people also take mining, and so you might find it a pain to find nodes to mine... depending on how much time you put into it, when you play, server population and so on. Herbalism tends to be a bit less intensely farmed. Either of those will mean you have to run around gathering stuff though.
If on the other hand you're trying to level that alt and don't want to spend too much time on gathering, skinning may be better, you can still make good money with that as well. It depends on what's most important to you ;)
