My advice:
Level up your profs now if you want to have gold. Sure, it will be a bit of a grind running around low level areas picking peacebloom, but you have a fast mount for herbing in Azeroth, and you have flight for herbing Outlands. I find the add-on GatherMate and the GatherMate Data module VERY helpful for gathering professions. It records where nodes have been gathered in the past, making a fairly accurate prediction of where you may find one currently.
Level inscription if you choose to stick with that, or you can go with skinning or mining. Either choice will make more gold than an unused profession.
Once your skills are up to Northrend levels, you will quickly progress to maximum just by picking herbs you pass by during quests in Northrend.
I found Howling Fjord to be a better spot for herbalism than Borean Tundra, but if you like the quests in Borean Tundra better, you may prefer starting there.
I would say Dragonblight is actually more like 72-75 and Sholazar basin 76-79 since that's when the quests there unlock. Quests in Northrend award nice amounts of gold, and there are dailies available even at level 70 that help you start building reputation early on that will be helpful to you at 80.

Sholazar basin 76-79 since that's when the quests there unlockAye, but the final chain with the avatar of Freya isn't unlocked till you have flying, and the last quest for the Oracles/Frenzyheart is a level 80 3-man quest against the Lich dude.
