Mage professions? You could take Tailoring/Enchanting. That's what I always do. Tailoring to make awesome cloth-pieces with (especially with BC-tailoring), and enchanting for a money-drain/enchants.

I would pick two gathering professions for starters, mining and skinning for example. Then you can sell and make some cash. You can skip one gathering profession at a higher level and pick tailoring, jewelcrafting whatver.
Another alternative could be something like:
Herbalism - enchanting
or
Mining - tailoring (sell ores, and make clothes)

Mage... I'd go tailoring. It's always nice to be able to make gear for the places where you can't get drops. For your second profession, I'd pick a money-maker, and Mining's probably your best bet out of Skinning, Mining and Herbalism. Just gather the ore, and sell it on.
I'd steer clear of Enchanting because it's such a money hog, not really fun if you don't know the game that well, and Alchemy / Blacksmithing / Jewelcrafting / Engineering / Leatherworking are a bit rubbish without the right gathering professions.
Other good combo's for a mage: Alchemy/Herbalism, Jewelcrafting/Mining and Engineering/Mining (nice for PvP), in order of decreasing goodness.
