My main is a 70 draenei protection paladin, and i've been aoe grinding since the mid 40's.
First thing you should know is that aoe grinding is very ineffective for paladins up until at least level 34, and it doesnt really start to get decent until 45. This is due to the lack of holy shield in part, but also because there are very few decent aoe grinding spots at lower levels. Once you get up into the 40's you've got a good selection of areas to grind in all the way to outland.
As for which shield you should use... it doesnt matter. The only time one shield is better than another is when it has a chance on block or chance when hit to deal damage to the attacker, or to give the attacker some other ill effect.
i would suggest focusing on "of the eagle" gear at lower levels, since strength/melee stats will provide little to no benefit when you're using a 1hander. Eagle gear increases your mana pool allowing you to worry less about running out in the middle of a pull, and keeps the stamina you need to tank instances early on.

Yeah, generally speaking gear isn't a major factor until you hit about 65 or so simply because you out-level it all so damned quickly. Unless you intend to PvP in a specific bracket, I wouldn't even purchase a blue before 68 or so simply because you'll find something better - a green, even - in the next ten levels.
