Ok as far as the DK stats go I feel pretty comfortable with my knowledge of them except for one: hit. When it comes to hit I honestly don't know where I should be. I know that a lot of our spells count on it but, when it comes to pvp, where the heck am i going to get it? None of the basic gear has it and im definitely not going to receive it through enchants so where? Do I use my gem slots to get it or what? Anyways any help would be appreciated!

Hit is for raids, when a boss can be 2 or 3 levels higher then you.
For PvP and other things they should be your level and you have nothing to worry about, well at least no need for hit rating

So i was worried over nothing? Oh my goodness... One would think it would be important but I suppose I learned something today!

You have a 5% base chance to miss an equal level player when using a single weapon or special attack. While dual wielding your auto attacks have a 24% miss chance. Spells have a 4% chance to miss an equal level player.
A little bit of hit rating certainly won't hurt you in pvp but too much will just be wasted and it is usually not a priority compared to the other available attributes.

I think it's actually 17% now(if it's the same as in PvE), they changed much of the hits in wotlk, for example, only 8% hit is now required for raidbosses.
