Hit rating for DW Brewmaster?

Hello there,
If I dual wield as Brewmaster, do I need to hit the "white" hit cap (so that my auto attacks can't miss) or is 7,5% enough? The reason I'm asking is because you get Elusive Brew from auto attack critical hits. If this is the case - wouldn't a 2-hander be a better choice than using DW?

No. White attacks use a single roll for both hit and crit. That means, if your crit is 30%, you still crit with 30% of your auto attacks no matter if your hit is 1%, 7,5% or 27%. This only applies to white attacks.
The sole reason why hit is a worthy stat to stack is
chi generation
, not elusive brew stacks. A missed Keg Smash or Jab can have a severe impact on your mitigation. It is therefore very much worth it to stack hit up to 7,5%, which is required for a 100% hit chance on all your special attacks, and not a single point past that.

if you would like to see a properly itemized Brewmaster Monk. I prioritize the hit cap (7,5%) and Expertise hard cap (15%), and after that I go for a ton of Haste with some Stamina here and there. I am a little over the hit cap, I am planning to fix it with some future item upgrades.

I'll do Thror a favor and ask something I'm not entirely sure about:
How do you open up on a boss optimally? Ofcourse, opening with Keg Smash, but then what? BOK, Guard, TP+Guard? I assume getting shuffle up ASAP would be the priority, and throw in a TP-boosted Guard as soon as you have the spare GCD for it, is this correct?

I usually go Dizzying Haze, Tiger Palm, Keg Smash Jab then Guard and Zen Sphere. Once those are up, I hit Blackout Kick as needed, Breath of Fire if it's a mob pack and then rinse and repeat, hitting the defensive cool downs as needed.
