What do you want to do? Heroics?
From what I've heard you can do heroics with 1200 SPH. As far as stat priorities go, you should aim for Intellect first.

Well cupu, because we gain mana back from critical heals, crit is also very good for a paladin.
In terms of gear, what I've noticed is alot of pieces that are +spell power and +mp5, versus the +spell power +crit counterparts.
I prefer the crit, because it transfers to mp5 when you land a crit heal, and it can also help in sticky situations. Infusion of Light can save a raid member - or the raid.
You're pretty much where I am in terms of gear... Your mp5 is pretty big, but I'm at 25% crit 180mp5.
Have you healed 25 mans yet - because you're more than capable with those stats :D

In my experience, MP5 seems to fade out when you move on to raiding. What most pallies focus on is INT. Any items that have spell power but no int is out of the question. Because Divine Plea is now a key factor in holy pallies healing, having a larger mana pool will equal to more MP5. So I would rate it the following:
If you have SP below 1550:
Spell power
Int
Crit
Mp5
Haste
If you have SP over 1550:
Int
Spell power
crit
Haste Mp5
On the topic of too much crit, there is never too much of anything (crit, int, SP), but it all comes down to what you are willing to give up in order to gain that extra crit point. Its more about how we rank our stat points depending on how our tanks do or which boss we are fighting.

Intellect
Intellect has received a HUGE boost with WotLK mechanics, and is now the best stat for Holy Paladins by far. Let me list what 100 Intellect gives you:
* 126.5 Intellect, with BoK and Divine Intellect
* 1897 Mana at the start of the fight
* 39.5mp5 from Divine Plea, if its used on CD.
* 21.3mp5 from Replenishment, with 90% uptime.
* 4.7mp5 from Arcane Torrent, if you are a Blood Elf.
* 25.3 Spell Power
* 0.759% Spell Crit
This gives you a lot of mana, which lets you cast a lot more Holy Lights and be more liberal in using them.
That's what Intellect does for you. For the cost it is far more beneficial than any other stat in a raiding environment. (If that's not clear, I mean that you should stack alot of Intellect).

Spell power is the main priority, followed closely by crit. You will have to mix haste in because the new pieces generally have crit/sp, haste/sp/mp5, or sp/mp5.
Keep in mind, if there is a lot of aoe damage, haste>crit>mp5. The problem tho, you go oom really fast if you stack haste.
Crit/int=longevity
Haste/MP5=hps (quick, hard hitting fights.)
I have a set designed for both scenarios that swaps out 4 pieces between the two types of healing. I noticeably go oom a LOT faster with an extra 200 haste on top of the egg proc, but it's easier to keep people alive with 1 second FoL's and .5 second (with trinket proc, 15% haste judgement, and crit shock) holy lights. Haste is a good way to go for running a lot of heroics, but it's harder to chain pull as you will be struggling to keep your mana pool up.

Obviously everyone is going to have their own opinions, but as jeddic pointed out, intel is huge for a
holy
pally. Divine Plea works off your
total
mana, so mp5 has become not as important as it used to be. If you're looking to be able to handle all heroics, and 10-25 man raids you should be looking for somewhere around 1.7ksp, and 20k mana. I have yet to drop below 10k mana in a raid or fight, if you are using divine plea everytime it's up.

Divine plea is my MP5... I have 1800 sp, with a 17k unbuffed mana pool. I have about 105 mp5 without BoW.
Crit/int is your longevity now. MP5 is a waste as you usually get it on gear that only has spell power on it.
I actually love haste. But it does take a lot of it to make me happy. Getting the "egg" from the badge vendor is almost enough haste for me, but I do stack a bit more to get close to a 1 sec FoL with egg proc and JotP proc'd. Keep up on your divine plea, and you shouldn't have issues.
Normal instances.... Well, I healed all of them as ret with lvl 70 gear.... If you go oom on a normal instance, you have a horrible tank, or you aren't using divine plea.
