If the quests in your current zone are proving too difficult for you, try another zone that's suitable for your level range, there's always more than one zone that's at the right level.
You should find that you soon pick up some quest rewards that update those old items.

You can level just fine without doing any instances, though you will be missing out on a big part of the game.
At low levels it's far easier and cheaper to take two gathering professions and buy any craftable items you want from someone else.

You should be fine with quest rewards and drops until end game, as previous have stated try another zone if it's too rough for ya, make sure your optimizing your spec/rotations as well (class forums are good for this).

I went from level 40 to level 60 on my warlock without changing a single item, but then I had chosen my gear carefully and had +spellpower and +stamina enchants on them.
You can level in level 30 greens to 60. When my alt shammy hit 60 he had no trinkets, no greens above lvl 40, no neck piece and one ring. /played 2 days.
Are you really saying that all the way from 40 to 60 you never had any quest rewards that were upgrades?

There is no need to wear the same items for more than one zone tbh.
Quest rewards alone should keep you updated for that level, and are
free
If you feel you're lacking though, I would suggest doing several short instances to get yourself a few blues which will make you fly through zones.

Casters can get away with it longer as well IMO as their damage is spell based where as melee have to hit with their weapon so keeping that upgraded at least is a good idea.
