I threw on whatever gear was an upgrade while I was leveling. Before 80, odds are you won't get defense capped.

While i leveled my warrior, i used the addon Tankpoint to determin what item was best for tanking, making the solution a bit better.

northrend instances are very easy on normal, so don't get too bogged down in stats. however, i would recommend you keep the item in each slot that has the highest possible defense rating (i.e.
daunting handguards
) to make getting to 540 easier when you ding 80.
not that you necessarily need to wear all of it, but if you have lots of defense gear laying around, you will have more flexibility in your gear sets.
