The Cult of the damned,
Started as a human only Cult in Lordaeron. Of course there will be more humans.

Um, lol? It's the Scarlet Crusade, the whole reason they were created was because they distrusted any non-humans.

Twilight's Hammer was Orc/Ogre first, long before Humans started joining it.

There are more humans in the various cults because they're the native race on Azeroth with the highest population.
Trolls have plenty of stuff going on for them, with the various troll societies around the world.
Night Elves are still hurting from Mt Hyjal going boom. Plus they're not the bunny-rabbit-procreation type.
Tauren were seriously hurting from their nigh-constant war with the centaur. They're slowly recovering.
Lordaeron was a human nation, same with Kul Tiras, Gilneas, Dalaran, etc.
High elves / blood elves came pretty close to being wiped out.
Draenei are nonnative.
Orcs too.
Gnomes lost their hometown, and only recently got the surface back.
Dwarves are pretty common in cults. Not as much as humans, but there are 3 nations of em.
Goblins rarely join cults, not much profit in armageddon.

Yeah, I think the playable race with the highest population would fall between Humans (not just of Stormwind) and Troll's (not just as Darkspear.)
Scarlet Crusade is going to be mostly if not near completely (>98% humans) as the people it's composed of have a general hatred of anything non-human, especially Undead, but that includes such races as Orcs and Trolls and Goblins.
Cult of the Damned could have any number of non-human followers, but it started out in the human kingdoms of Lordaeron so is obviously mostly them. Not because of discrimination but because of practicality. Excluding the Forsaken, most of the Horde didn't even know about the Scourge prior to Wrath.
Same thing with Syndicate, they're formed in Alterac human communities. Not much chance for any other race to join.
Twilight's Hammer originated from Orcs and Ogres, and is probably mostly composed of them despite what game mechanics show.

Um......right? The Crusade, what we know as the Scarlet's were corrupted by the hand of the Dreadlord, and kicked out any and all non-humans from the groups, playing off the hatreds/fears that already existed in the ruling class of the Crusade heads.

very clearly
that that was the reason why they left.
