Mouseover macros make all the difference, imo:
#showtooltip
/cast Healing Spell
Insert whatever heal you want for Healing Spell. This way, all you have to do is move your cursor over the players icon and press the hotkey that the macro is bound to. To make this even easier, download Grid and simply mouseover the targets name in Grid. Very quick healing, very fast reaction time.
Also, Clique helps for quick spell casting too. If I recommended only 2 add-ons, it would be Grid, followed by Clique. :D

For me one of the worst things about being a healer is I feel like I miss out on all the action.
Totally agree. Only solution is to spec dps for a while; you learn the fights much better from that angle.
Another problem i have is making sure everyone gets heals when a lot of action is going on. It can get really confusing deciding who gets what heal, where I should be standing, if and when I should cure / dispell, ect ect. Sometimes I have to resort to spamming holy nova / PoM and hope everything dies down before I run out of mana.
That's the skill gap. Keep practicing, you get faster & more intuitive. I only play a healpriest, no offspec, no second toon, which helps me stay on top of my game. Playing my other toons used to take the edge off.
There is already a shortage of Priests and yet they think it's best to nerf one of our best heals? Brilliant!
Praise be the CoH nerf of '09! Without CoH spam, you will be forced to use a wider range of spells, which means you will feel unable to meet the demands until your skill rises to the occasion. Push into it, you'll get there. How many healing spells do you have? How many do you
use
? See my previous paragraph...priesting is complex, and that's the treasure. I watch mages & eleshams jump ship for the more complex mechanics of DKs. Affliction locks have long boasted that their spec is thrilling because it's so challenging. There are simpler classes out there; priests are not built that way.
It's why we are universally regarded as the most versatile healing class. Not necessarily the best at every single task of course, but always the most versatile.
The absolute worst part though is how ungrateful people are. I've noticed whatever group im in people get so excited when they find a tank. They're all "omg thank you so much xoxoxoxo". Where I rarely get any kind of acknowledgment at all. I've gotten to the point where if anyone criticizes my healing tactics (i rarely have anyone die btw) I just leave.
Can't help you with that one. You need confidence. Which comes from being secure in your mastery of your class. And with all due respect, it sounds like you are not fully in control of your toon, even if you do manage to keep people alive. Again, that will take work, and the CoH nerf might be just the push in the right direction to force you to get comfortable with your range of healing options.
And there is no addon for that :) Although if you're not using click-casting, you're going to be struggling twice as hard. (The two top click-casting addons are Healbot and Clique.)

First of all I like the general idea of healing, and it can get exciting when a lot of stuff is going on, but a lot of it just sucks.
It doesnt sound like this is the class/spec for you.
For me one of the worst things about being a healer is I feel like I miss out on all the action. There are so many dungeon bosses (and not to mention the dungeons themselves) that I don't even know what they look like. My eyes are always glued to the health bars. Is there some kind of add on that places people's health above their characters or something that makes it quicker to read where everyone's health is at?
Control+v puts the healthbars over peoples heads. You can get addons for your ui like healbot, grid, xperl. But you will still constantly be watching bars.
Another problem i have is making sure everyone gets heals when a lot of action is going on. It can get really confusing deciding who gets what heal, where I should be standing, if and when I should cure / dispell, ect ect. This is a skill/practise thing. As a general rule be aware of your squishiness and stay back as much as possible while keeping the tank in range. You should try to have all the dps in range too but dont chase them if they run from you. You should never need to spam holy nova. Renew/POM/flash/PoH and greater heal should get you out of more or less anything. An addon such as healbot or clique is good for your majorly used heals. I have renew on shift+rightclick, Flash heal on shift+leftclick and dispel magic on alt+rightclick.
Other than that I'm not sure what you guys could help with. A lot of my frustration is definitely targeted at Blizzard. There is already a shortage of Priests and yet they think it's best to nerf one of our best heals? Brilliant!
I think you have more important things to worry about than nerfing CoH? CoH though is a nice situational spell and will continue to be. The "nerf" cries come from the priests who do nothing but spam CoH to top the meters. We are meant to be the most versatile healers, and spamming CoH isnt versatile. If you want to be a one trick pony, go shaman :)
I get a lot of thanks actually. And a lot of "wow nice healing". But it comes with time. I had bad comments too while i was learning and practising, but once you get good you will get noticed. As for being excited by finding a tank, thats just because there is a tank shortage. doesnt mean the tank is good. Healing is a selfless job to be honest. You get blamed if things go wrong and rarely get praised if it goes right. You shouldnt let it bother you.
All in all, i think you have two problems. Firstly you need to get better, which comes with time and practise and unerstanding of the class. Then you really need to think is this the right class/spec for you. I love being a priest its my first and only character and don't have any negativity about it at all. I couldnt see myself being anything else. You may want to re-roll if the negatives outweigh the positives or try out the shadow spec.
Good luck!
