since tailored gear prior to level 70 is no good, take 2 gathering profs. then when you hit 70, drop one to powerlevel tailoring
you may want to save the runecloth & netherweave that you gather while leveling (make a "clothbank" alt)

You definately want tailoring end game. Not only is Spellfire/Frozen Shadoweave the best pre-raid gear but its also hard to replace it with pre-25 man gear. On top of that a lot of the higher level items don't drop as items but as bop patterns. Any cloth wearer should have tailoring. As a secondary profession pick something that truely makes money without costing money such as herbalism, skinning, or mining.

I initially wasn't planning on taking Tailoring with my Mage, but he's not my main and my guild isn't really strong enough yet to facilitate alt-runs for Kara, so Spellfire/Spellstrike will be my gear cap for a very long time. I leveled as Mining/JCing, and after I hit 70 I dropped Mining for Tailoring. That being said, I farmed everything before-hand and leveled Tailoring over the course of a weekend from 1-365, and just finished it off the other night.
So basically, what everyone else has said - some combination of mining/skinning/herbalism till 70, then drop one for Tailoring. I see the value in what Narcissica said, but part of the reason I've never leveled Tailoring on any of my other casters was because I just didn't see most of the crafted gear as being essential to my leveling process - at least not so much so that it warrented going out of my way to make stuff when I could just be leveling instead. Some of it is pretty nice, but not worth the effort if you're just leveling asap.

I just rolled a mage a few weeks ago and started with the standard tailoring/enchanting. My main is Min/Eng so I thought I might change the new professions to JC/Ench.
Do you think it will work good enough not to loose too much money?
I don't know what happens when I reach 70, because at this time I think I will have lots of designs and forumlas.

No and no.
JCing from about 225-300 is horrifyingly expensive if you don't solo farm everything (and if you try, it wouldn't really be worth the time). 300-350 is a joke, since Green outland gems are just inexpensive and all over the place, but after 350 when you have to start buying gem cuts it gets expensive again since your chances of finding a gem design are really slim unless you're just incredibly lucky. I've seen maybe 5 gem designs drop in all my time, and since 4 of those were in groups I only got 2. Everything else I have was bought.
There isn't much for a JCer by way of rep aside from random trinkets and Meta cuts, which you get at 360 (I think), so you'll still have to pay a bit off the AH for some of the more valuable Rare cuts.
Enchanting would be easier, since alot of the good formulas are rep related, but even then the reason everyone goes Enchanting/Tailoring is because so much of the stuff you make while grinding Tailoring isn't good for much besides DE fodder to feed your Enchanting.

enchanting will arguably make you as much money as herbalism will in the long run. the only semi tough part is getting the enchanting up high enough to disenchant 70 epic gear. between quest rewards, gear replacements, random crappy green gear, extra crafted tailoring gear (you defintly want tailoring) and boss drops noone wants enchanting mats are plentiful. you dont even need to enchant gear once you get to the point where you can DE everything if all you are looking for is cash.
plus you dont have to go searching all over the place for mats like herb/mining and dont have to kill mobs like skinning
