All the classes and specs have viable roles in the many varied fights, but true to their word, Blizzard made it so no class was absolutely necessary, with several notable exceptions.

25 man Rezuvious: You need two priests who can mind control.

10/25 man... can't recall: One of the bosses has an AoE manaburn centered on himself, making it extremely difficult for a Pally tank.

Gluth: A frost mage or destro lock is borderline necessary to aid in the kiting of the zombies. Not impossible with just simple OT kiting, but life is so much easier with some more creative, class dependent work.

I imagine that there are ways to do it without such classes, but if one is going for the awe inspiring "The Immortal" Achievement/Title, class makeup is important.
