Shaman or Druid. Because they can play different roles depending upon your spec. Meaning tank, DPS or healer. What other classes can do all of those things? Not a mage or warrior.

Hmm, can't say I've seen many end-game Shaman tanks!
Healers and tanks are always in demand, Resto-Shaman and Resto-Druid are excellent healers, Feral-Druids are excellent tanks.
