Have a look at the last few pages of the "Post Your UI" thread, there are some
very
nice minimalist UI's out there which I'm sure you will find to your liking (hopefully Metz manages to finish his in time for you to download it...).

That's too broad and general a question to answer. There are tons of addons to do tons of things.
If you want something in particular, ask. Or more appropriately, kindly ask the creator of a UI you like which addons they used.

I'll take a stab at actually being useful here. I run a minimal UI posted

. The addons I use are:
Align - Helps align UI elements precisely.
BetterBlizzOptions - Makes the UI window movable and sizable.
ButtonFacade - Button skinning engine.
ButtonFacade_Apathy - Clean elegant button skin.
Chinchilla - Minimap. I'd recommend SexyMap instead (too lazy to switch).
Clique - Click-casting.
Combuctor - All-in-one-bag addon.
CowTip - Tooltip addon.
DoTimer - DoT and cooldown display.
EnhancedColourPicker - Adds RGB input fields to the colorpicker for more precise UI design.
HRef - Chat-channel URL linking.
kgPanels - Creates and manages custom UI panels and art.
Macaroon - Action bars based on complex macro input. A bit advanced. I just use it for keybindings.
Mapster - A minimal map addon.
MikScrollingBattleText - Best combat text addon.
NefGCD - GCD display.
NefUI - Custom scripts, including the data text (see Fortress for something similar) and cast bars (AzCastBar?).
PitBull - Custom unit frames. Slightly advanced.
SatrinaBuffFrame - Okayish buff frames. Not great, but there aren't any better ones. =(
SharedMedia - Imports lots of popular statusbars, fonts and background textures into most addons.
Skinner - Skins various UI windows.
And some others you don't need to care about.
