I personally think it's a great way to make money as materials are always in demand - especially at the start of a new expansion. I would, however, try to put this combo on a class that could benefit from the Stamina bonus and Haste bonus - maybe a tank character (I think Druid might be the optimal choice)?
If you're more DPS oriented, maybe Skinning/Herbalism might be the better way to go.
