I wouldn't call Applejack flat at all. She's not as developed as many of the other main characters, but she's by no means a flat character.

She's also got a real sense of duty and also one of pride - think about how she refused to return to Ponyville in The Last Roundup, for instance.
You don't need to have a billion characteristics to be a well-developed character, as long as what is portrayed balances well, seems natural and is executed well.

Other than resulting to obvious insults, what the heck is the draw of this?
It is a child's show, so what do grown, intelligent, mostly men see in this?
You've never seen a kid's cartoon that, rather than being 100% mind-numbing pablum, was something the parents could enjoy too?
Cartoon Network did a
lot
of them back in its heyday -- Dexter's Laboratory, The Powerpuff Girls, Foster's Home For Imaginary Friends, Samurai Jack -- and has a couple now -- Adventure Time, Regular Show.
Nickelodeon had some to a lesser extent -- Fairly Oddparents, Angry Beavers, and some hit-or-miss Spongebob episodes.
Disney's managed to hit that note more recently with Phineas and Ferb.
Pretty much everyone involved in the new MLP worked on at
least
one of those aforementioned shows, so even though the aim (at young girls) dictated by the franchise is clear, it still has that very strong vibe that resonates outside of its target demographic.
But I suppose if you think along the lines of "all cartoons are stupid kids' crap" (which I get the feeling is your position from the way your question is worded), then this one isn't going to impress you, either.
(I'm not even going to google this phenomenon, Has the lame cartoon aimed at girls I remember back in my youth been given a gritty reboot?)
I think the problem lots of people have is when MLP gets mentioned, they immediately think of those lame 80's
half-hour toy commercials
cartoons. And then grab the nearest bottle of sedatives.
This iteration of the show is not your father's Oldsmobile. Unlike the 80's one, you can watch it (as an adult) without wanting to gouge out most of the organs attached to your head. Well, okay, there was that
one
episode. We don't talk about

Dude, chill with the hostility. If this isn't for you, then it isn't for you, no need for either side to make a scene of this. No one's forcing you to watch it, at worst we'll just suggest it to you because of our personal opinion; just as you are free to suggest to us that we stop watching it. As long as neither of us get hostile about it - and I'll admit; some MLP fans can get pretty hostile about the show, unfortunately - we can coexist peacefully.
As for this thread being here; it's a public forum. As long as the nature of the thread and the posts within fall within acceptable site-guidelines, people can post whatever they want. If you don't want to have to put up with these threads, then ignore them. That's all that can really be done.

a) ignore the thread and look for something you like, or
b) post in the thread about how you dislike it, giving very few real reasons

doubt that WoWhead will be gaining any more attention from my entire server
because all those people are seriously going to give up on one of the most user friendly, accessible, and largest information databases about WoW (and now other major games too, not to mention the entire network WowHead belongs to)
Its not like he can go to MMO-champion which also has a number of active MLP theads and also bans and locks the posters and threads spewing hate and trying to troll.
Anyway enough about him.
The one thing i love about the MLP Fandom are the sheer amount of amazing artists that have come up. Anthro, Human, original recipe pony or class-and-style-of-their-own. These artists are just so brilliant and enrich the franchise so much. I'am incredibly happy that the company and creators allowed it to blossom. Sure there are negative aspects but there would have been even without the awesome people and fans. You dont ban honey cause of the bears. You deal with the bears when they come.
I dont just mean visual drawn and painted art. the songs, literature and the music videos, jokes and hilarious videos. Original projects and comics.
Its just beautiful to see it happen.
