The macro I've been using for years is:
/run if not IsMounted() then C_MountJournal.SummonByID(0) end
/dismount
/cast Stealth
If I'm not mounted, it will try to mount up (or just stealth if I can't mount due to in-doors/movement). If I'm mounted, including flying about the ground, it will dismount me and cast stealth. If I'm stealthed it will try mount up or just cancel stealth. Simple and great, right?
In SL pre-patch it stopped working. Specifically it no longer stealths me when I hit it while flying, which makes world pvp a lot harder. Can anyone help me fix it?

I also noticed this with e.g. being midair and casting SWP on a target on my priest main, resulting in a message "you are mounted". So it looks like casts either can no longer be casted midair or you need ground contact for certain actions.
I tried to reproduce your issue on a rogue alt.
Your macro works but only with ground contact. So there must have something changed with being midair.
Trying to find a solution for/with you and still testing around.

So I have no explanation why this doesn't work in one macro, as dismounting and hitting stealth directy after works pretty fine.
The workaround I found is a keyboard macro.
I bound a macro to a button that consist of: , 500ms pause,
This works fine (although it tries to cast stealth while mounting up to), but not sure if this is either suitable for you or the usage of keyboard macros tolerated by blizzard.

I turned on "Auto dismount in Flight" which makes every ability/spell cast dismount you, which makes the macro work like I want it too. Unfortunately it also dismounts for everything else which is not prefered.
I can live with it, but I'd prefer to figure out a way to accomplish the functionality without turning on that option.
