Personally, I'd just drop your Enchanting for Blacksmithing, as you've already spent the time and effort levelling your mining. Pick up JC on one of your alts and you can feed both with your already-established miner. Having to start over with mining from 0 is a step backwards, imo.

Wait, what...no! That would be silly. This is assuming you've gotten near to max skill on enchanting anyway - you'd be swapping 2 ring enchants (and of course large amounts of gold) for 2 extra gem sockets, which is a net gain of exactly nothing power-wise.
Also, being able to enchant your own stuff is nice, and hardly worth trading for the ability to just make belt buckles. There will probably be some nicer BS crafted armour next tier, but you'll also be able to buy that, the days of BoP crafted epics are long gone.

They may not be the absolute, EJ-certified "best" for cutting-edge raiding, but it's a very close thing these days, especially as a tank, which is the one role for which mining is actually ok from a stats perspective, a free 120 stamina isn't bad.
Picking up different profs on an alt is good advice though, and using your mining to feed mats to a JC would be a good way to go.

Jc/Ench is a very nice combo for making money.
If ore is cheap on your server then you won't need mining past 425 Skill in JC.
With the combo if you prospect Cata ore. Craft gems in ring/necks and sell for 35g each. Even if they don't sell you can always disenchant them for the mats to sell or scroll in the AH.
I don't have the combo on 1 toon. But want I generally do is buy ore> prospeced into gems > Cut blue gems and bank green> get tried of random green gems so cut into rings or necks or Post in Ah if current Jc daily> Profit.
Yellow and Orange are your rings and necks. Red is the Fist Weapon (which give 2-3 GCE), Purple,Green,and Blue are your dailies. Purple and Green can also be used for rings/necks also if needed.
