New to the game. Trying to be a Priest. Very confused about the whole mana thing

I don't think a priest is a bad choice for a new player, you just need to understand how the class handles solo and group combat. Some new players seem to find healing classes unintuitive and have trouble with them as a result but if you like healing then go for it.
As Akihiro mentioned spell costs are based on your base mana rather than your total mana so better gear, buffs, and some talents will increase the number of spells you can cast before running out of mana.
At low levels spirit based mana regeneration is really your only option for restoring mana in combat. You should know that you normally do not regenerate mana for 5 seconds after casting a spell (the "five second rule"), talents such as Meditation can change that. At higher levels you'll be able to find gear which constantly restores some mana, even while casting.
You can also try to increase the effectiveness of your heals through talents and by obtaining gear with spell power or critical strike rating.
As a priest both the Discipline and Holy talent trees help you become a strong healer. Holy is generally more focused on bigger and more efficient heals while Discipline offers more damage reduction and buffs for your party members. Which one suits you better really depends on both how you like to play and what sort of encounter you are trying to heal through.
So wouldn't mean a character with nice gear and naturally low intellect like an undead or troll would use less mana than a blood elf? That's... kind of weird. You would think the character with the most mana would be able to cast the most spells.
There really isn't any significant difference between the base mana of different races of the same class. While your initial attributes have some variation depending on race the stats you gain as you level depend only on your class so the initial difference of a couple of points in each stat becomes irrelevant rather quickly.
