I levelled from 1-50 as holy and was new to the game and didn't know much. People told me i was stupid and were really "wow you really levelled as holy, omg how did you cope".
So i went shadow. After 5 levels i switched back again. I absolutely hated it if I'm honest, but then I'm a healer through and through and dps never really appealed to me.
70-80 i was disc priest to try out the new talents, which was fun (but probably less fun at lower levels).
Overall though, play how you like and get there when you get there =) and welcome to forums.

same here except i lvled 1-54(i haven't got an 80 yet) as disc with spirit tap nobody on hydraxis knows what it is! they think I'm a dps but i tell em I'm a tank healer well i pay much better attention to the tanks since they are very important like the healer,but they never thank me the dps love my disc healing almost every dps I've grouped with is now on my friends list asking 4 more healz. I've finally convinced alot of people disc is great and you don't have to be holy to heal and still alot think I'm dps still:( that's the bad thing nobody realizes the changes in it yet!
anyway you can lvl any spec me I'm so stuck on disc i can never respec i even trashed spirit tap at 50. the fastest is supposed to be shadow but never got far with a shadow one or holy. lol yea im a true blue discipline healer,even though it gets aggravating with people thinking im dps. (im a secret healer)

For early levelling, holy is very nice, with the extra crit, quick access to your DPS talents, etc, while still handling some good healing talents for low level instancing.
Once you reach level 40 and can spec into Shadowform, shadow is the way to go, up until about 68 to 70, at which point you can continue into shadow, or go disc/holy with Spirit Tap, giving you zero downtime with an endless mana pool so long as you're killing mobs that grant experience, and it also maintains the ability to heal instances very well.
