Mining and Engineering if you are going to be PvPing. If you don't pick up mining with Engineering, you are going to be spending A LOT of gold buying the materials you'll need. Trust me. My 29 Twink Warrior has 225 Engineering and I spend so much freakin gold on her, its not even cool.
Also, mining is one of the greatest money-making professions out there. Three different crafting professions use ore. Sell the ore and bars you aren't using to make bank. My 27 Priest has over 60g self-made from mining.

generally for a hunter skin/LW is a good profession... you also get to choose the Dragonscale working after you reach 300 so you can craft your own epic mail stuff....really good ones too.

The epix recipes are way hard to get. Sell for far too mcuh gold on the AH and they basically never drop if you go grind for them. Sucks, but true.
What IS cool though is that once you hit outland you get to craft the felscale recipes, these are great for hunter and will last a good while. The rep reward blues available in hellfire penninsula are even better of course.
Getting to make mining bags and leatherworking bags are also great, though it might be hard to sell the LW bags, since they use so much junk to make them.
Of course, the LW armor patches are even more useful. Leg armor patches are excellent, and the MP5 patches from Scryers are also excellent. Even the standard 10 stamina heavy knothide patches are a great way to buff up your health with very little cost.
