Noob Prot Item Enhancement Questions

Hello everyone! This is my first post on here so I'm not too sure if it's been covered already, but I was looking for some opinions from some of the more experienced raid tankers. Currently, I'm a 78 Prot Warrior and I'm starting to look at item enhancements for when I hit 80 and start getting Heroic type gear. These are the things I've been looking at (and I don't really know how to do the link thingy so I'll just type it all out -.-):

Head:

Heavy Boreran Armor Kit: +18 Stam

Chest:

Greater Defense Enchant: +22 Defense Rating
Powerful Stats Enchant: +10 All Stats
Heavy Borean Armor Kit: +18 Stam

Shoulders:

Heavy Borean Armor Kit: +18 Stam

Bracers:

Major Defense Enchant: +12 Defense Rating
Greater Stats Enchant: +6 All Stats

Cloak:

Mighty Armor Enchant: +225 Armor
Titanweave Enchant: +16 Defense Rating

Hands:

Heavy Borean Armor Kit: +18 Stam
Armsman Enchant: +2% Threat, +10 Parry Rating

Belt:

?

Shield:

Defense Enchant: +20 Defense Rating
Tough Shield Enchant: +18 Block Value
Major Stamina Enchant: +18 Stam

Legs:

Frosthide Leg Armor: +55 Stam, +22 Agi

Boots:

Tuskarr's Vitality Enchant: Slight movement speed increase, +15 Stam
Heavy Borean Armor Kit: +18 Stam

Weapon:

Titanium Weapon Chain: Reduce Disarm duration by 50%, +28 Hit rating
Unholy Weapon Enchant: Chance of reducing enemy damage by 15 (I know that's not alot at that level, but anything to help mitigate dmg?)

I dunno. These are kind of the things that I'm looking at. If you know of anything better please let me know what your opinions are. ANY help is appreciated. Also, is there any comprehensive list of good tanking gems? Sorry for the noobishness but this is going to be my first time going to do Heroics and what not and hoping to get up to raid specs.

Also, I was reading that people were saying that the cap is 540 for Defense Rating. Is it 540 Defense Rating or 540 Defense? Someone was saying to get 540 Defense you have to have 689 Defense Rating?

My Stats as of right now at lvl 78 are:

HP: 18439
Defense: 509
Defense Rating: 510
AP: 2004

Any recommendations as to what I should build towards stat-wise on my way up TO 80?

Head: Arcanum of the Stalwart Protector

Chest: 22 defense rating until you don't need it for crit immunity, then swap to Enchant Chest - Super Health.

Shoulders: Lesser Inscription of the Pinnacle and its greater variant later.

Bracer: New stamina enchant coming next patch.

Belt: Eternal Belt Buckle

Boots: Enchant Boots - Greater Fortitude

Weapon: New stamina enchant next patch. Until then, mongoose, agility, accuracy or a weapon chain seem like the best options.

Meta gem: Austere Earthsiege Diamond
Blue gem: Solid Sky Sapphire
Yellow gem: Enduring Forest Emerald
Red gem: Guardian's Twilight Opal or Regal Twilight Opal
If the socket bonuses aren't too great you can ignore socket color and just stack pure stamina gems. The gems assume you are at 540 defense; if you are not, then gem for defense. Just try to get away from defense gems as soon as possible.

The defense "cap" (AKA crit immunity) for raids is at 540 defense skill, which it requires ~690 defense rating on all your gear + gems + enchants to obtain. For heroics the cap is at 535 defense skill, which corresponds to about 665 defense rating.
