A lot (read: all) of this will probably end up coming down to opinion and preferences. To me, mages and warlocks seem to fit best into the blood elf personality -- powerful wielders of magic bent on, quite frankly, blowing things up. (OK, so it's just Kael's followers who want things blown up. I still think "Disco Inferno" would be the theme song for my blood elf mage.) If you want to go melee, though, you're basically choosing between paladin and rogue (though I hear paladin tanks are in this time of year :)).
So yeah, don't think my advice is really worth anything. ;) I know it sounds cliche by now, but take the class that appeals to you and run with it.

Ehhh, I personally don't like the Blood Elf Priest spells at all. If I was going to do a horde-side Priest, I'd go Undead for sure. Blood Elf Rogues and Paladins (if you plan on going Ret) are great, though, for pretty much anything.
If you don't really care about actual abilities and just what looks cool, though, then don't even listen to me and roll whatever the heck you want. [: As I've said before, I have a Blood Elf Warlock, so I'm the last one to listen to metagame thinking.

Anything but a rogue, and Belf chicks are just plain too skinny. and they get hella ugly also, so just be a guy, for the love of (Insert Random WoW name here)...
