The short version:
Stats:
Stamina - very important. Strength - not as much, but good to have. Intellect and Spirit - useless. Agility - works fine as a minor addition to your dodge.
is going to keep your mana up during both solo and group work.
is a good talent to have for leveling.
Keeping an extra set (Holy or Retribution, or even both) can sometimes help you get in groups that already have a tank.
Of course, for dungeon tanking, Defense is the first must-have.

for Raids. Only after you are "Defense capped"
But really, until you get to 70+, as long as you have plate gear with Dodge/Parry/Block Rating/Block Value, you should be fine.
