I don't think its a healing issue as much as a tank role issue. If you only have yourself and the druid healing, I'd say swap the DK to OT/eat hatefuls.Hateful Strike can be dodged/parried/blocked and the bear can only dodge (and probably not that high a %) since they are really mitigators/absorbers now and not avoiders/mitigators. Even still you will have to look after both of them. Our trees say it is the worst fight for them to heal 10 or 25.

basically, dont be let down by the healing meter.
healing meter means nothing.
if your tank is taking too much damage from PW, its porbably he is undergeared.
if your heals arent able to keep up or you run out of mana to fast, you're undergeared.
ur gonna be an awsome healer :)

This, so much!
Healing meters are not the same as dps meters. It isn't a race, and there is a thing called overhealing that is frowned upon for a reason. If your tank is dying you could be beating everyone in healing, what good will that do in the end? What you should look at more than overall healing if you're interested in cold hard numbers is hp healed per mp spent and overhealing percentage. The lower your overhealing percentage the better, means you're effectively using your mana pool.
Of course on some fights overhealing on tanks is needed at certain points when you can foresee massive damage in advance, but that's not generally the rule, more of an exception.
Really, even the dps meters aren't an end to all. I know so many people obssessed with dps meters they refuse to assist on killing adds or let's say freeing the cocooned people on Maexxna so they can come out on top. It harms the raid in the end.

*** This brings me to question if
The Egg of Mortal Essence
can proc off of VE ticks? People say it procs off of Lifeblooms final burst effect, which, according to wowhead, applies the same "effect" as VE (Apply Aura: Dummy). Of course, I am tired, and sick... so if I'm talking crazy talk, please tell me...
If it can, it's probably being stealth-fixed in 3.0.8.
It can't, tested this myself on the PTR.

For Patchwerk it isn't too bad if you have two direct healers but a resto druid makes things a bit more tricky. The best idea would be as mentioned before, to switch your DK and druid tanks and have the druids MT it. At 60, a feral druid was the best tank for Hateful Strikes because of the massive damage reduction by their armor but at this point it's better to simply avoid them with the Death Knight's high amount of dodge and parry they should have if specced properly and keeping their Blood Runes on cooldown.
For your healing, most of what you should be doing is spamming Flash Heal, to be honest. Glyph your Flash Heal for the reduced mana cost and spam away on the offtank. If you wait for him to need a heal before you heal him, that's a wipe because he Hateful Strikes faster than yo Flash Heal and one Flash isn't enough to cover the damage of a Hateful so spamming Flash Heal and getting Renew and ProM bouncing are also important. Lightwell helps as well, just make sure you remember to recast it when the cooldown is up on it. I'm still getting used to the idea of using it too.
Raiding isn't about healing done or overhealing done or heals per mana.
Raiding is about killing the boss.
