I am a level 61 Human paladin and am only at 250 mining and i am having a hard time finding places to farm. could someone let me know a good place to farm?

250 means you're still only on Small Thorium. You're going to be doing laps of Un'goro and Western Plaguelands... Silithus can work too, but that's mostly rich thorium.

try Winterspring as well. It has a fair amount of Thorium.

Use the maps to learn a route and follow it, mining everything you bump into ;)
