I don't think there's a set standard for how much Spirit you should have.
It's basically the smallest amount you can have without having any issues with Mana Regen. If you find you have too much mana while raiding, feel free to experiment and reforge some into Mastery or whatever your #1 stat priority is.
With Mindbender and Hymn of Hope, we have a lot of mana regen available to us without needing a different healer to use a mana regen CD, not to mention any trinkets you might have. However in the new raids you'll probably want as much Spirit as possible just so you make sure you don't fall short, at least for the first time(s) doing it.
As for solid numbers, I don't really have a recommendation for what it should be at.

Can't reforge into INT.
Right - if he's Disc, he should reforge to Mastery. If he's Holy, he should reforge to Haste soft cap(s), which are at 3039 Haste Rating, and 4721 Haste Rating. After the second Haste breakpoint, Mastery is the next best stat for Holy.

Actually, I know a few Disc Priests who seek a certain amount of Crit or Haste.
Crit, because critted-heals can yield extra absorbs. Haste, because you can smite faster and more often. Or, take a rest period to build some mana, and then get your Archangel up fairly quickly when needed for heavier healing.
One thing I love about Healing, since Cata came out, is that there is no single way to do a spec.... it is all what one is most comfortable with. Two healers with the same class and spec can have very divergent styles of play.
(But, of course, the end results are what matter most, right?)

My preference is to avoid Crit/Haste over Mastery because Mastery will more specifically absorb greater damage when you want it to.
Crit will activate more Aegis', yes, but you can also waste absorbs that way on a random Prayer of Healing with unnecessary bubbles over the party since 5.2.
Haste is a bit of a non-issue since you can stack Atonement with Power Infusion/Bloodlust most of the time.
I just find Mastery to more accurately do its job rather than the others which are either more situational or random.
But yes, you could do them as well, it's not like you have to go Mastery. You will want a decent amount though as it directly influences your absorbs.

I do Smite heal and I'm normally happy with about 6k Spirit, going as much as I can for Haste and Crit for more dmg = more heal.
But I wouldn't dare cast a Flash Heal :P

If you are only smite healing you're actually gimping yourself. Atonement is only meant to be used where another healer would cast Heal, Holy Light, Nourish, Lesser Healing Wave or whatever the monks cast.
During higher damage phases you should be SS'ing the tanks (Single target) or PoH on the groups. You'll see a massive increase in contribution to the raid by doing only that. Also try to game the rupture procs, not only will it increase your mana regen, it'll increase the survivability of tanks.
