for your first char, i'd say do only gathering professions until you're max level - just gather as much as you can, keep gathering, and sell it all for as much as you can. by the time you hit max level you'll have thousands of gold so then you can use that to level whatever professions you like
As a first char, I'd suggest Inscrip.
I have Inscrip and Blacksmithing on my DK (I would NOT recommend doing this). Anyways, depending on the day and the glyph, I can often sell the glyphs for MUCH more than the mats. BUT, realize that glyph prices can fluctuate (seen them go 80-160g for some, 5-30g for others, etc etc), and that some glyphs, even at the same level, vary completely in price.
Long story short, I would do Inscrip and Herb. But make sure you look up which glyphs are selling for what before you make them.
As a first char I would recommend 2 gathering proffessions:
Choose 2 of these and sell everything you gather on Auctionhouse in stacks of 20 .
Make a lvl 1 alt , buy bags for that alt-char and mail everything you pickup to that character and use it to sell your mats & other items thats not soulbound.
Only sell on AH , dont use it to buy to avoid spending more than you get.
I leveled a Warrior on a new server to 78, right before Cataclysm and could afford all riding skillups (inc 5000g epic flyer) just by having Herbalism / Skinning combo and selling everything.
currently herbalism is quite profitable, especially coming dark moon faire...
herbalism and skinning, you walk from herb node a to herb node b, killing as you go along, and skinning... go to friendly town, mail everything to your bank/AH alt for later selling in bulks of 20... and then go out and gather again till your bags burst and mail them again...
80 to 85, gathering herbs, gain exp... there are some players who simply gathered to level to 85...
being your first toon, gathering will make you good gold. my hunter was skinning/herb and had 3kg @ level 35. i later changed it to mining, engineering. mining makes the gold, engineering spends it. but with a rogue i would definitely keep skinning so you can farm mats for armor later on and pick up a second gathering prof.
