I did something similar myself.
My 'lock is a tailor/enchanter and I chose herbalism/inscription on my DK because the availability of vellum on the AH was terrible and the prices were ridiculous
Lately though, herb prices seem to be returning to sane levels, but I still like being able to create vellum on demand.
I don't want to miss the chance to sell a 100g+ enchant just because I didn't have any of the vellum I needed.

Enchanting scrolls are definitely the way to go if you're looking to make gold by selling enchants.
You can stand in Orgrimmar/Ironforge all day spamming the trade channel and be lucky to get a 10g tip for enchants, or you can sell the scrolls for huge profits.
Crusader mats are about 50-60g, the scrolls sell for 150g and you rarely have to re-list them.

Have you seen herb prices lately? Not what they were a couple of weeks ago.
I'd rather spend a few minutes of a session buying, enchanting and listing on the AH, than have to constantly stop what I'm doing to go and pick herbs.
